BLUEBERRY AND COCONUT PANCAKES

I  have never had a sweet tooth so most of my recipes are savoury based.  I do appreciate I am in the minority so I have made a resolution to make more effort.  These pancakes seemed a good place to start as the natural sweetness of the blueberries and the addition of only natural sweeteners means they are super healthy.  Not a sole will know they contain no sugar…sssshhhhhhh.

INGREDIENTS

125g plain flour
1 tsp baking powder
50g desiccated coconut
2 tbsp agave nectar
200ml dairy free milk
100g fresh blueberries
rapeseed oil
½ lemon

  1. Mix the flour, baking powder, coconut, agave and milk together in a bowl.
  2. Meanwhile add the blueberries to a pan with a dash of water and simmer gently until they break down (keep some aside for decoration)
  3. Once cooled, add the blueberries to the pancake mix and fry in small batches
  4. Serve with a squeeze of lemon, a sprinkle of coconut and extra agave
