PESTO, COURGETTE AND PEA SOUP

I love making fresh pesto but sometimes it just doesn’t fit into my day.  I’ve tried pretty much all the vegan pestos on the market and none really hit the spot.  I finally found the Happy Pear Pesto and it is delicious.  The entirely vegan pesto is available in Waitrose – its creamy and full of flavour and about as good as making it fresh.  Read our review of the pesto here.  This soup not only tastes great, it so quick to make so is a perfect solution when a quick and easy meal is required.  My kids really loved the soup too.

INGREDIENTS

  • 1 leek
  • 2 tbsp vegan butter
  • 2 tbsp cornflour
  • 650ml water
  • 1 tbsp bouillon powder (or 1 stock cube)
  • 1 courgette
  • 2 handfuls peas
  • 2 tbsp  The Happy Pear Pesto
  • handful chopped parsley
  1. Chop and fry the leek in the vegan butter
  2. add the cornflour and stir
  3. add the water and bouillon powder and bring up to a simmer
  4. cook for 5 minutes
  5. use a potato peeler to peel the courgette into small peelings and add to the pan
  6. add the peas and stir in the pesto
  7. cook for a further 5 minutes and serve with crusty bread
